Easy Banana and Cinnamon Pancake Recipe



Here's a quick and easy Banana and Cinnamon Pancake recipe that you can use for Pancake Day - or any other day - which is not only perfect for students on a budget but also for everyone else :)



I use the basic Scotch Pancakes recipe from the NOSH student cookbook, which I highly recommend - although I haven't used it often.. but my housemate uses it frequently and her meals turn out so well!



Ingredients:
2 Eggs
1/4 Mug Sugar
1 Mug Self-raising flour
1/2 Mug Milk
White Flora or Oil to Fry
2 Bananas
2tsp Cinnamon

1. Put the eggs, sugar and flour in a bowl and beat with a fork or wooden spoon
2. Mash the bananas by first placing the bananas in a bowl and microwave them for 1min 30 secs in order to soften, so it'll be easier to mash them with a fork.
3. Mix in all of the mashed bananas and then slowly pour the milk in little by little until you get a smooth batter.


4. Preheat your pan to the highest heat setting and once its very hot, turn it down to the medium heat setting 5. Pour half a ladle into the saucepan and once you see bubbles, forming on the surface, turn the pancake over
6. Cook the other side until golden brown - try not to turn the pancake again as it would have less of a fluffy texture.
7. After both sides are golden brown, move the pancake onto a cooling rack (it prevents the pancake to condensate on the plate - you don't have to do it but I would highly recommend it) and after 2/3mins, move onto your serving plate and they're ready to eat ^_^




My perfect topping with these pancakes is Nutella but you can also try it with other toppings, such as fresh bananas, strawberries, honey etc. - Be creative!

  2. They look so good! I'm not a huge fan of banana in my pancakes (although I love it in any other kind of baking) so i'll just be making the traditional kind tomorrow.

    1. That's a shame >_< Why don't you try just putting in a bit a cinnamon to give it a nice sweetness to it?
